Vegan arugula, strawberry, avocado, walnut salad

Arugula salad with strawberries, walnuts and avocado


  • 4 handfuls of fresh arugula, washed and spinned dry
  • 1/2 ripe avocado, diced
  • 4-5 large, ripe strawberries, sliced
  • 1/4 cup walnuts
  • 1 Tablespoon lemon juice
  • 2 Tablespoons EVOO
  • 1 teaspoon agave nectar
  • Salt & Pepper to taste


  • Toast the walnuts in a toaster oven or oven until light brown. Let cool and finely chop.
  • Place the arugula on salad plates
  • Cover with the strawberries, avocado and walnuts
  • Mix the EVOO, lemon juice, agave and salt & pepper (adjust as needed to taste)
  • Pour the dressing over the salad
